Which variety to choose?: If you like oils that are bitter and have a certain spiciness: Koroneiki, Arróniz, or Coupage are undoubtedly the best match for you. If you prefer oils that are sweet and pleasant on the palate: Arbequina, Arbosana, or Manzanilla are perfect. According to pairing:

• Arbequina: Vegetables and sauce preparations (mayonnaise, aioli, etc.)
• Arbosana: Citrus and baking
• Arróniz: Legumes and game stews.
• Coupage: Warm salads, mushroom and pomegranate carpaccios.
• Koroneiki: Citrus, escarole salads, and oily fish such as red tuna.
• Manzanilla Cacereña: White fish, chocolate, and asparagus.

The Artajo 10 range is harvested green, very early. This way we achieve exceptional quality, prioritizing green fruity flavor and aroma over yield. It takes up to 10 kilos of olives to produce one liter. More information about the varieties here.
