This moment is key: although the oil yield is lower -10 kg of olives are needed for 1 L of our Artajo 10- the juice extracted is loaded with beneficial compounds, with an aromatic and sensorial intensity that's hard to match.
At Artajo, we also have the advantage of having our own olive mill within the olive grove, harvesting the olives and milling them immediately afterward. We ensure that they are transported from the tree to our winery in less than two hours, ensuring unparalleled freshness and avoiding the oxidation that can damage their organoleptic properties.
