Artajo variety guide: If you like oils that are bitter and slightly spicy: Koroneiki, Arróniz, or Coupage are undoubtedly the best match. If you prefer oils that are sweet and pleasant on the palate: Arbequina, Arbosana, or Manzanilla are perfect. Depending on the intended use: Arbequina: vegetables and sauce preparations (mayonnaise, aioli, etc.) Arbosana: citrus fruits and baking Arróniz: legumes and game stews.
